Tweaking Traditions with Egg Nog French Toast

Season’s Greetings, my CHD friends! The holiday season is officially upon us! Can you believe it!? I feel like this year has just flown by. It was a big year for me: I transferred to the Pediatric ED, decided to go back to school, my fiancé and I settled into our first place and I finally became an “adult” as I transitioned to an Adult Congenital Heart Clinic. That is a lot of change!
And change can be a scary thing. The fear of the unknown is really what gets most people, I think. I had a lot of unknowns this year, particularly with my heart and health. But one thing that I love about the holidays is that there is no change, there are just traditions—comforting traditions. Those traditions I grew up with, like setting the porcelain manger scene up, jamming to Christmas tunes, baking holiday cookies, and getting a new tree ornament with my name and year on it. This year, since we have our own place, my mom asked me if I wanted all of my past Christmas decorations to place on my own tree.
I almost had heart attack—pun intended—at that thought. Christmas change is not supposed to happen! No more change. Even though I am now an “adult” and have transitioned to adult healthcare services I still see myself as my mom’s little “kiddo.” My mom is still my medical advocate and attends all my appointments. I call her with every single INR blood draw, for goodness sake! These ornaments symbolize my childhood, the traditions and the unbreakable bond my mother and I have. I am not ready to give that up and I am not sure if I ever will be.
Many of us CHDers have a special attachment to a parent that others will never understand. My mother literally stood at my bedside ‘round the clock as I battled infection and setbacks time and time again. No one will ever understand what we have. She is biggest cheerleader and I am her best work. There is no Black Friday deal great enough to even attempt to display the love and admiration I have for her. So this year as I have ventured into “adulthood,” I plan to tweak one of our holiday traditions. Tweak, not change.
Growing up, my mother made Christmas breakfast for my sister Jessie and me. Breakfast was always full of French toast, bacon, eggs, love, and a dash of Christmas tunes. But this year I am going to take on the Christmas breakfast tradition and make my family the best Christmas breakfast ever. This Egg Nog French Toast recipe is sure to wow not only my family, but yours, too!
Egg Nog French Toast
1/2 cup of liquid egg substitute
1/4 tsp cinnamon
1/4 tsp pumpkin pie spice
1/3 cup Silk Nog
2 packets Splenda
3 slices of white bread (about 50 calories each)
** Whipped cream and sprinkles if desired **
Spray both sides of your bread with non-stick spray. Next, combine all of the ingredients (except the bread slices) together in a medium-sized bowl. Mix well with a fork. Use the egg mixture as an egg wash, and dip your bread into it, coating both sides. Cook in a pan sprayed with non-stick cooking spray until both sides of the bread are golden brown. When they are done cooking, plate them and, if desired, add some whipped cream and sprinkles.
